Do you need a good lunch or side dish to add to your meal? This kale and brussels sprouts salad is a good side or starter for any occasion. A sponsored Instagram post starring Ayesha Curry put this salad on my radar. I wanted to make this salad at that very moment. Maybe I was hungry. Who knows. This was a new salad mix for me. I never thought to use the vegetables that way.
Of course, I did not have everything at the very moment. I was missing one of the main ingredients…brussels sprouts. It was not a surprise to me because I started eating them almost a year ago. Yes, you heard right. I acquired a taste for brussels sprouts last year. I know I was missing out on a good vegetable. It is like eating a miniature cabbage, so I am not sure what was the problem.
I appreciate my food palate is changing. The other main ingredient was a no-brainer. I always have kale available. Kale is usually found in my smoothie.
Most of all, this salad required the vegetables in their raw form. Afterall, I prefer my brussels sprouts roasted. A little shocked I wanted I wanted this dish. There are only five ingredients needed, not including the salad dressing. Remember I said this dish is a simple but powerful salad. There is very little prep time besides shavings and cutting the sprouts and kale. Prep time…what prep time? You can always buy the brussels sprouts already shaved from Trader Joe’s which is what I did for this one.

Ayesha might have used almonds in her salad. After the shaving and chopping put everything in a bowl and mixed with the salad dressing. I played around with making my dressing but decided on Trader Joe’s Vinaigrette.
If you like to whisk up your own vinaigrette salad dressing, please do. I mean that will extend the limited prep time.
This salad is tasty. I know it will be a salad I whip up at any given moment. Not to mention this salad can work for many meals. I paired the salad with some sautéed shrimp.
