When you want to have a hearty breakfast without the fuss go for breakfast muffins. Send the kids off to school with these easy to make muffins. Not to mention, you can make these ahead and pop in the microwave the next morning. Who doesn’t like to save time? Beat the rush and prepare the kid’s breakfast ahead of time. Not trying to get ahead of ourselves, but this recipe makes for a good start. Getting that back to school routine going can be challenging. A tip is to start the kids nightly routine a week or two before the first day back. My family still kid around that my kids are on a schedule. They are in their early 20s but it was like clockwork.
Breakfast Muffin Ingredients:

5 eggs or egg whites

Spinach
-
Bell peppers (grind)
-
Cheese
-
Avocado Salsa
-
Of course, you can add meat (sausage, bacon, etc.)
I used mini sweet peppers ( yellow, orange and red). I had to grind in a mini food chopper (I don’t like peppers like that (especially big chunks)!
Baking Time
I used some olive oil to grease the muffin pan. The spinach went in first, followed by peppers, and cheese before pouring in the eggs. I know some people like to mixed the vegetables in the eggs then pour all in the muffin pan. That is fine as well. I like to eyeball each pan to make sure vegetables are even out. It is much easier to change out the ingredients to make different batches.
Preheat oven 350
Bake for 12-15 minutes

Are a good breakfast to make ahead of time and store in the fridge. Yes, meal prep your breakfast. The kids will thank you!!! I’m still working on being consistent with meal prepping all meals.
I enjoyed these egg muffins with some guacamole salsa and side of fruit. Do you get away from preparing during the school year?
